Broccoli Kritharaki

Ingredients:

  • 1 bag of Banza rice or 8oz of orzo pasta 

  • 1 medium head of broccoli

  • 1 tbsp olive oil 

  • 2 green onions

  • 1 clove of garlic

  • ½ cup parmesan*

  • ½ tsp salt 

  • feta

  • italian parsley

Directions:

  1. Preheat your oven to 400 degrees, toss broccoli crowns in a drizzle of olive oil and a pinch of salt. Roast in the oven for 15 min.

  2. While broccoli is roasting, cook orzo or Banza rice! according to package directions and set aside.

  3. In your pasta pot at medium heat, add 1 tbsp olive oil, green onions, and garlic and cook until fragrant (3-5 min).

  4. Add orzo back to pot, along with parmesan and salt. Toss to coat. Add roasted broccoli and toss again.

  5. Top with italian parsley and feta.

    * Vegan option: omit parmesan cheese or try a dairy free cheese alternative like Follow Your Heart.
