Vegan Cacio e Pepe

Ingredients:

Directions:

  1. Cook spaghetti about 3 minutes shy of cooking time, reserve 1 cup of the pasta water, then drain, rinse, and set aside.

  2. Melt butter in a pan over medium heat. Add cracked pepper and bring to a simmer.

  3. Add reserved pasta water and bring back to a simmer. Let mixture reduce for 5 minutes.

  4. Toss spaghetti until fully coated. Add parmesan and stir until melted.

optional: garnish with freshly chopped italian flat leaf parsley
