Vegan Cacio e Pepe
Ingredients:
1 cup Follow Your Heart parmesan cheese
1 box of Banza spaghetti
1/2 tbsp black pepper
1/4 cup Earth Balance butter
Directions:
Cook spaghetti about 3 minutes shy of cooking time, reserve 1 cup of the pasta water, then drain, rinse, and set aside.
Melt butter in a pan over medium heat. Add cracked pepper and bring to a simmer.
Add reserved pasta water and bring back to a simmer. Let mixture reduce for 5 minutes.
Toss spaghetti until fully coated. Add parmesan and stir until melted.
optional: garnish with freshly chopped italian flat leaf parsley
