Greek Chickpea Salad
Ingredients:
1 can chickpeas, drained and rinsed
1/4 cup red onion, diced
1/2 a cucumber, quartered and chopped
10-12 cherry tomatoes, halved
2 tbsp olive oil
1 tbsp of lemon juice
1 tbsp dill
2 tsp garlic powder
1 tsp salt
1/2 tsp oregano
1/4 tsp paprika
Directions:
Add chickpeas, cucumber, tomatoes, and onion to a large bowl and toss.
In a separate bowl, mix together olive oil, lemon juice, dill, garlic powder, salt, oregano, and paprika until well combined.
Add the dressing to the vegetable mixture and toss again until evenly coated.
Optionally, top with crumbled feta.
Serve chilled with tossed pita or naan.
