Easy Butternut Squash Pasta
Ingredients:
1 box Banza chickpea alphabets
2 cups Pacific Foods butternut squash soup
½ cup cheddar cheese shreds*
¼ cup nutritional yeast
½ tsp dried sage
½ tsp dried thyme
½ tsp nutmeg
salt and pepper to taste
Directions
Cook pasta according to package directions. Drain and gently rinse pasta, return pot to the stove and reduce heat to medium low.
Add butternut squash soup, pasta and cheese shreds. Stir lightly, until cheese is melted. Add remaining ingredients and stir to combine. Serve hot with your favorite roasted veggies.
*Vegan option: use vegan cheese shreds, or omit cheese and replacing with an additional 1/4 cup of nutritional yeast.
