Creamy Vegan Bowties with Roasted Broccolini

INGREDIENTS

  • 1 box Banza Bowties

  • 1 cup raw cashews

  • 3 cloves garlic, minced

  • 4 tbsp olive oil, divided

  • 1/3 cup nutritional yeast

  • Juice of 1/2 lemon

  • Salt & pepper, to taste

INSTRUCTIONS

  1. Cook garlic and 3 tbsp olive oil over medium heat until fragrant and beginning to golden in color, about 4-5 minutes. Pour into a heat-safe dish and set aside.

  2. Cook Banza Bowties according to package instructions. Once pasta is almost done cooking, reserve 1 1/2 cups of pasta water. After, strain & rinse the pasta and set aside.

  3. Toss broccolini on a baking sheet with 1 tbsp olive oil and salt & pepper to taste. Roast in the oven at 400ºF for 12-15 minutes, or until stems are tender.

  4. Add cashews, garlic + oil mixture, nutritional yeast, salt, lemon juice, and reserved pasta water to a blender and blend until smooth.

  5. Chop roasted broccolini and add to a pan along with the sauce and cooked pasta. Toss until everything is coated evenly. Serve while hot and enjoy!
