Chickpea Melt

Ingredients:

  • 1 15oz can chickpeas, drained and rinsed

  • 1 cup celery, chopped (about 3 medium stalks)

  • ¼ cup red onion, diced

  • 1 green onion, chopped

  • 1 tbsp fresh parsley, chopped

  • ½ cup vegan mayo

  • 1 tsp dijon mustard

  • ½ tsp poultry seasoning blend 

  • 2 tsp lemon juice

  • Cheddar cheese *

  • Sliced sourdough bread*

Directions:

  1. In a large bowl, add chickpeas and use a potato masher (or fork) to smash about ¾ of the chickpeas.

  2. Add celery, red onion, the whites of green onion (save greens for later), parsley, mayo, dijon, seasoning, and lemon. Mix all ingredients until well combined.

  3. Scoop onto toasted bread, top with cheddar cheese, and broil on high until cheese is melted and bubbling.

  4. Garnish with the greens of the green onion. Serve open-faced or as a sandwich.

    * Vegan options: use dairy free cheddar cheese

    * GF option: substitute your favorite GF bread for the sourdough
